8 oz farfalle (bowtie pasta) or any preferred shape

2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 cup broccoli florets

1 cup zucchini, diced

1 cup bell peppers (mixed colors), sliced

1 cup baby spinach

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

½ cup grated Parmesan cheese (optional)

Fresh basil leaves, for garnish (optional)

Instructions
 

Boil the Pasta: In a large pot, bring salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the cherry tomatoes, broccoli florets, and zucchini. Sauté for about 5-7 minutes or until the vegetables are tender but still colorful.

      Add Bell Peppers and Spinach: Stir in the sliced bell peppers and baby spinach, cooking for an additional 2-3 minutes until the spinach wilts and the bell peppers soften.

        Combine Everything: Add the cooked pasta to the skillet with the sautéed vegetables. Sprinkle in the garlic powder, Italian seasoning, salt, and pepper. Mix everything together, and if the pasta seems dry, gradually add a bit of the reserved pasta water until the desired consistency is achieved.
