2 cups elbow macaroni

1 cup cooked bacon, chopped (about 6-8 slices)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 cup frozen peas, thawed

1 cup shredded Cheddar cheese

1 cup ranch dressing

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prep the Ingredients: While the pasta is cooking, chop the cooked bacon, halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. Also, thaw the frozen peas if not already done.
