Ranch Garlic Parmesan Chicken Skewers

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/2 cup ranch dressing

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon dried parsley (plus extra for garnish)

1/2 teaspoon dried oregano

Marinate the Chicken: In a large bowl, mix the ranch dressing, minced garlic, olive oil, paprika, garlic powder, black pepper, salt, dried parsley, and oregano. Add the chicken cubes and stir until fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Preheat the Grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.

      Assemble the Skewers: Thread the marinated chicken onto the skewers, leaving a little space between each piece to allow for even cooking.

        Grill the Chicken: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Add Parmesan: In the last 2 minutes of grilling, sprinkle the grated Parmesan cheese over the chicken skewers. Close the grill lid to help the cheese melt.
