2 cups cooked jasmine rice (preferably chilled)

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (plus extra for coating)

1/4 cup finely chopped fresh parsley

1/4 cup finely chopped green onions

2 large eggs

1 clove garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional)

Olive oil (for frying)

Prepare the Mixture: In a large mixing bowl, combine the chilled jasmine rice, grated Parmesan cheese, breadcrumbs, chopped parsley, green onions, minced garlic, eggs, salt, black pepper, paprika, and cayenne pepper (if using). Mix thoroughly until all ingredients are well incorporated.

    Form Patties: Using your hands, take a handful of the mixture and shape it into a patty about 1/2 inch thick. Repeat this process until all the mixture is used, placing the patties on a parchment-lined baking sheet.

      Coat Patties: On a plate, spread out some extra breadcrumbs. Gently press each rice patty into the breadcrumbs to coat both sides evenly for a crispy exterior.

        Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat until shimmering. You can test the oil by dropping a small bit of the mixture into it; if it sizzles, it's ready.

          Fry the Patties: Carefully place the rice patties in the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until they are golden brown and crispy. Use a spatula to turn them gently to avoid breaking.

            Drain and Serve: Once fried, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve them warm, garnished with a sprinkle of fresh parsley, and enjoy with your favorite dipping sauce.
