2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

4 large egg yolks

2 tablespoons instant espresso powder

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven:

    Preheat your oven to 325°F (160°C). Prepare a baking dish or larger roasting pan by filling it with about an inch of water—this will create a water bath for baking the custards.

      Heat the Milk and Cream:

        In a saucepan over medium heat, combine the milk, heavy cream, and half of the sugar (1/4 cup). Stir occasionally until the mixture is steaming but not boiling. Remove from heat.

          Mix the Egg Yolks:

            In a mixing bowl, whisk together the egg yolks, remaining sugar (1/4 cup), instant espresso powder, vanilla extract, and a pinch of salt until smooth and slightly pale.

              Combine the Mixtures:

                Gradually pour the hot milk and cream mixture into the egg yolk mixture while whisking continuously. This will temper the eggs and prevent them from scrambling. Ensure everything is well combined.

                  Strain the Mixture:

                    To achieve a silky texture, strain the custard mixture through a fine-mesh sieve into a large measuring cup or another bowl. This will remove any lumps or cooked egg bits.

                      Divide into Pots:

                        Divide the custard mixture evenly among your chosen ramekins or custard pots (usually about 6-8). Carefully place them in the prepared baking dish and cover with aluminum foil.

                          Bake:

                            Place the baking dish in the oven and bake for about 30-40 minutes, or until the custard is set and the edges are firm but the center is still a bit jiggly. Check for doneness by inserting a knife into the custard; it should come out clean.

                              Cool:

                                Once baked, remove the pots from the water bath and allow them to cool at room temperature for about 30 minutes. Then, refrigerate for at least 2 hours or overnight for the best flavor.
