2 cups heavy cream

1 cup whole milk

1/2 cup granulated sugar

4 large egg yolks

2 shots of freshly brewed espresso (about 1/2 cup)

1 teaspoon vanilla extract

A pinch of salt

Grated dark chocolate or cocoa powder for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Espresso: Brew two shots of espresso and set aside to cool slightly.

      Mix Cream and Milk: In a medium saucepan, combine the heavy cream, whole milk, and half of the granulated sugar (1/4 cup). Heat over medium heat until it just begins to simmer. Do not bring it to a boil. Remove from heat.

        Whisk Egg Yolks: In a separate bowl, whisk together the egg yolks, remaining sugar (1/4 cup), and a pinch of salt until the mixture is smooth and pale.

          Combine Mixtures: Gradually add the warm cream mixture to the egg yolk mixture, whisking constantly to temper the eggs and prevent curdling.

            Add Espresso and Vanilla: Stir in the brewed espresso and vanilla extract until fully combined.

              Strain Mixture (Optional): For an ultra-smooth custard, you can strain the mixture through a fine mesh sieve into another bowl or measuring cup.

                Prepare Ramekins: Divide the custard mixture evenly among four to six ramekins, depending on the size.

                  Set Up Water Bath: Place the ramekins in a large baking dish and carefully fill the dish with hot water until it reaches halfway up the sides of the ramekins.

                    Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the custards are set but still have a slight jiggle in the center.

                      Cool and Chill: Remove from the oven and let the ramekins cool to room temperature. Once cooled, refrigerate for at least 2 hours or until chilled.
