Ingredients
  

4 medium-sized beets

3 tablespoons olive oil

Salt and black pepper, to taste

2 cups arugula (or mixed salad greens)

1/2 cup crumbled feta cheese

1/4 cup walnuts, toasted and roughly chopped

1/4 cup thinly sliced red onion

1 tablespoon balsamic vinegar

1 tablespoon fresh lemon juice

Fresh herbs (like parsley or dill), for garnish

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the beets: Wash and peel the beets. Cut them into bite-sized cubes and place them in a bowl. Drizzle with 2 tablespoons of olive oil, salt, and black pepper. Toss until evenly coated.

      Roast the beets: Spread the beets on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-40 minutes, or until tender when pierced with a fork. Stir halfway through for even roasting.

        Prepare the dressing: In a small bowl, whisk together the remaining olive oil, balsamic vinegar, lemon juice, and a pinch of salt and pepper. Set aside.

          Assemble the salad: In a large mixing bowl, combine the arugula, roasted beets (allow them to cool slightly), feta cheese, walnuts, and red onion. Drizzle the dressing over the top and gently toss to combine.
