1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon sea salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for heat)

1 tablespoon nutritional yeast (optional for a cheesy flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it's hot enough to make the chickpeas crispy.

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them onto a clean kitchen towel or paper towels. Gently pat them dry to remove excess moisture—this step is crucial for crispiness!

      Season the Chickpeas: In a large mixing bowl, combine the chickpeas, olive oil, smoked paprika, garlic powder, cumin, sea salt, black pepper, and cayenne pepper (if using). Toss until the chickpeas are evenly coated with the oil and spices.

        Spread on Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned chickpeas in a single layer on the baking sheet, ensuring they’re not crowded for optimal roasting.

          Roast: Place the baking sheet in your preheated oven and roast the chickpeas for 25 to 30 minutes, stirring once halfway through. Keep an eye on them—when they’re golden brown and firm to the bite, they’re done!
