Roasted Garlic and Broccoli Pita Pizza

2 whole wheat pita breads

1 cup fresh broccoli florets

6 cloves roasted garlic (or 2-3 raw garlic cloves minced)

1 cup shredded mozzarella cheese

¼ cup crumbled feta cheese

¼ cup olive oil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon fresh lemon juice

Fresh parsley or basil for garnish

Instructions
 

Roast the Garlic: If using raw garlic, preheat the oven to 400°F (200°C). Wrap the raw garlic cloves in foil with a drizzle of olive oil and a pinch of salt. Roast in the oven for about 30-35 minutes until soft and caramelized. If using pre-roasted garlic, skip this step.

    Prepare the Broccoli: In a small pot, bring salted water to a boil. Blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and transfer them to an ice bath to stop the cooking process. Once cooled, pat them dry with a paper towel.

      Preheat and Prepare Pita Base: Preheat your oven to 450°F (230°C). Place the pita breads on a baking sheet lined with parchment paper or lightly greased.

        Spread the Garlic: If using roasted garlic, squeeze the soft garlic from the skins into a small bowl. Mix in the olive oil and lemon juice until it forms a paste. If using raw minced garlic, just mix it directly with the olive oil and lemon juice.

          Assemble the Pizza: Spread the garlic mixture evenly over each pita. Top with the blanched broccoli florets, followed by shredded mozzarella and crumbled feta cheese. Sprinkle with red pepper flakes, salt, and pepper to taste.

            Bake: Place the prepared pitas in the preheated oven. Bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the pita are crispy.

              Garnish and Serve: Remove from the oven and let cool for a minute. Garnish with freshly chopped parsley or basil before slicing into wedges. Serve warm and enjoy!
