Roasted Garlic Mashed Cauliflower

Ingredients
  

1 medium head of cauliflower, cut into florets

1 whole bulb of garlic

2 tablespoons olive oil

1/4 cup unsweetened almond milk (or any milk of choice)

2 tablespoons unsalted butter (or vegan butter for a dairy-free version)

Salt, to taste

Freshly ground black pepper, to taste

1/4 teaspoon smoked paprika (optional, for added flavor)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Garlic:

      - Slice the top off the whole bulb of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap it in aluminum foil.

        - Place the wrapped garlic in the oven and roast for about 30-35 minutes, or until the cloves are soft and caramelized.

          Cook the Cauliflower:

            - While the garlic is roasting, bring a large pot of salted water to a boil.

              - Add the cauliflower florets and cook until they are fork-tender, about 8-10 minutes.

                - Drain and return to the pot.

                  Combine Ingredients:

                    - Once the roasted garlic is cool enough to handle, squeeze the soft cloves out of their skins and add them to the pot with the cauliflower.

                      - Add the remaining 1 tablespoon of olive oil, almond milk, butter, smoked paprika (if using), salt, and pepper to the pot.

                        Mash the Cauliflower:

                          - Using a potato masher or an immersion blender, mash or blend the cauliflower and garlic mixture until creamy and smooth. Adjust the seasoning, adding more salt or pepper as desired.

                            Serve:

                              - Transfer the mashed cauliflower to a serving bowl and garnish with fresh chives or parsley. Serve hot as a delightful side dish!
