Roasted Garlic Sweet Potato Mash

2 large sweet potatoes

1 whole head of garlic

3 tablespoons unsalted butter (or plant-based butter)

1/4 cup milk (or non-dairy milk)

Salt, to taste

Black pepper, to taste

1 teaspoon maple syrup (optional, for sweetness)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Garlic: Cut the top off the whole head of garlic to expose the cloves. Drizzle with a little olive oil, wrap it in aluminum foil, and place it in the oven. Roast for about 30-35 minutes, until the cloves are soft and caramelized.

      Prepare the Sweet Potatoes: While the garlic is roasting, peel and chop the sweet potatoes into roughly 1-inch cubes.

        Boil the Sweet Potatoes: Place the sweet potato cubes in a large pot, cover with water, and bring to a boil. Cook for about 15-20 minutes, or until the sweet potatoes are fork-tender.

          Drain and Mash: Once the sweet potatoes are cooked, drain them well. In a large mixing bowl, combine the sweet potatoes with the butter and milk.

            Add the Roasted Garlic: Squeeze the roasted garlic cloves out of their skins and add them to the sweet potato mixture. Mash everything together using a potato masher or a fork until smooth and creamy.
