Roasted Sweet Potato and Apple Slaw Bowls

2 medium sweet potatoes, peeled and diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

2 cups green cabbage, finely shredded

1 large apple (preferably Granny Smith), thinly sliced

1/2 cup shredded carrots

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped (optional)

For the dressing:

3 tablespoons apple cider vinegar

2 tablespoons honey or maple syrup

1 tablespoon Dijon mustard

1/4 cup extra-virgin olive oil

Salt and pepper to taste

To serve:

1/4 cup toasted walnuts or pecans (optional)

Crumbled feta cheese or a dairy-free alternative (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, ground cumin, salt, and pepper. Spread them out in a single layer on a baking sheet lined with parchment paper.
