Roasted Sweet Potato Wraps

2 medium sweet potatoes, peeled and diced into 1-inch cubes

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

4 large whole-wheat tortillas

1 cup black beans, rinsed and drained

1 avocado, sliced

1 cup fresh spinach, chopped

1/2 red onion, thinly sliced

1/4 cup feta cheese (optional)

Hot sauce for serving (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Season the Sweet Potatoes: In a large bowl, combine the diced sweet potatoes, olive oil, smoked paprika, cumin, cayenne pepper, salt, and pepper. Toss until the sweet potatoes are well coated.

      Roast the Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until they are golden brown and tender.

        Prepare the Wraps: Once the sweet potatoes are roasted, remove them from the oven and let them cool slightly.

          Assemble the Wraps: Lay a tortilla flat on a clean surface. In the center of each tortilla, layer a scoop of roasted sweet potatoes, a handful of black beans, slices of avocado, fresh spinach, and red onion. Sprinkle feta cheese on top if desired.

            Wrap It Up: Fold the sides of the tortilla over the filling, then roll from the bottom upwards to enclose the filling tightly. Repeat with the remaining tortillas.

              Optional Toasting: For a crispy wrap, heat a non-stick skillet over medium heat. Add the wraps seam-side down and toast until golden brown, about 2-3 minutes per side.

                Serve: Cut each wrap in half, drizzle with hot sauce if you like, and serve warm.
