4 medium-sized zucchinis

2 pints cherry tomatoes

3 tablespoons olive oil

1 teaspoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese (optional)

1/4 cup toasted pine nuts (for crunch)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes: Wash the cherry tomatoes and place them on a baking sheet. Drizzle 2 tablespoons of olive oil over them, sprinkle with salt, pepper, minced garlic, dried oregano, and red pepper flakes if using. Toss to coat evenly.
