Ingredients

For the Salmon:

1 lb fresh salmon fillet, skin removed

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper, to taste

For the Blueberry Glaze:

1 cup fresh blueberries (or frozen, thawed)

1/4 cup honey

1 tablespoon balsamic vinegar

1 teaspoon lemon juice

Salt and pepper, to taste

For the Wraps:

8 large lettuce leaves (such as butter or romaine)

1 avocado, sliced

1 small cucumber, thinly sliced

Fresh cilantro or mint leaves, for garnish

Lime wedges, for serving

Instructions

Prepare the Blueberry Glaze:

    - In a small saucepan over medium heat, combine the blueberries, honey, balsamic vinegar, and lemon juice.

      - Cook, stirring occasionally, until the blueberries burst and the mixture thickens slightly, about 8-10 minutes.

        - Season with salt and pepper to taste. Remove from heat and let cool slightly.

          Cook the Salmon:

            - Preheat your grill or a non-stick skillet on medium-high heat.

              - Pat the salmon dry with paper towels and brush both sides with olive oil.

                - Season with minced garlic, smoked paprika, salt, and pepper.

                  - Place the salmon on the grill or skillet, cooking for about 4-5 minutes per side until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

                    Assemble the Wraps:

                      - Once the salmon is cooked, remove it from the heat and let it rest for a couple of minutes before flaking it into bite-sized pieces with a fork.

                        - Take a lettuce leaf and place a generous amount of flaked salmon in the center.

                          - Top with slices of avocado and cucumber, and a drizzle of the blueberry glaze.

                            - Garnish with fresh cilantro or mint leaves.

                              Serve:

                                - Serve the wraps immediately with lime wedges on the side for an extra zest.

                                  - Enjoy your flavorful and nutritious Salmon Lettuce Wraps with Blueberry Glaze!
