Sausage and Potato Breakfast Skillet

Ingredients
  

4 breakfast sausage links (pork, turkey, or plant-based)

2 medium russet potatoes, diced into small cubes

1 small onion, finely chopped

1 bell pepper (any color), diced

3 cloves garlic, minced

4 large eggs

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or chives for garnish (optional)

Shredded cheese (cheddar or your choice, optional)

Instructions
 

Cook the Sausage: In a large skillet over medium heat, add the breakfast sausage links. Cook until browned and cooked through, about 8-10 minutes. Once done, remove from the skillet and slice into bite-sized pieces. Set aside.

    Prepare the Potatoes: In the same skillet, add olive oil. Once hot, add the diced potatoes. Season with salt, pepper, and smoked paprika. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and tender.

      Add Veggies: Add the chopped onion, bell pepper, and minced garlic to the skillet with the potatoes. Sauté for an additional 5-7 minutes until the vegetables are softened and fragrant.

        Combine: Add the cooked sausage back into the skillet with the potato and veggie mixture. Stir everything together and cook for another 2-3 minutes to heat through.

          Cook the Eggs: In a separate bowl, beat the eggs with a pinch of salt and pepper. Create small wells in the mixture in the skillet and crack an egg into each well. Cover the skillet and reduce the heat to low, then let the eggs cook until the whites are set but the yolks are still runny, about 5 minutes. Cook longer if you prefer firmer yolks.

            Serve: Once the eggs are cooked to your liking, remove from heat. Optionally, sprinkle shredded cheese on top and let it melt slightly. Garnish with fresh parsley or chives, and serve hot.
