1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried Italian seasoning

1/2 teaspoon red pepper flakes (optional, for heat)

6 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

9 oz refrigerated tortellini (cheese or meat)

2 cups fresh spinach or kale, roughly chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish (optional)

Sauté the base: In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if desired.

    Add aromatics: Toss in the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes or until the vegetables are softened and fragrant.

      Season the soup: Stir in the Italian seasoning and red pepper flakes. Cook for another minute to release the flavors.

        Build the broth: Pour in the chicken or vegetable broth and the can of diced tomatoes with their juices. Bring the mixture to a gentle boil.

          Cook the tortellini: Add the tortellini to the pot and cook according to package instructions, typically 3-5 minutes.

            Incorporate greens: Once the tortellini is tender, stir in the chopped spinach or kale. Cook for another 2-3 minutes until the greens are wilted.
