Savory Beef and Cheese Stuffed Peppers

4 large bell peppers (any color)

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (frozen or fresh)

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese (plus extra for topping)

¼ cup fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

Instructions
 

Preheat Your Oven: Preheat the oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and carefully remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

      Cook the Beef Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Brown the Beef: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.

          Combine Ingredients: Lower the heat and stir in the cooked rice, black beans, corn, diced tomatoes (with juice), cumin, smoked paprika, chili powder, salt, and pepper. Mix until well combined and heated through, about 3-5 minutes.

            Stuff the Peppers: Remove the skillet from heat, and stir in 1 cup of shredded cheddar cheese. Spoon the beef and cheese mixture generously into each pepper.

              Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil, sprinkle additional cheese on top of each pepper, and bake for another 10 minutes, or until the cheese is bubbly and golden.

                Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh cilantro before serving. Enjoy your delightful and savory creation!
