1 pound sirloin steak, cut into 1-inch cubes

2 cups baby potatoes, halved (or quartered if large)

1 cup carrots, sliced into 1-inch pieces

1 cup bell peppers, sliced (red and yellow for color)

1 cup red onion, cut into wedges

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper for easy cleanup.

    Prepare the Beef Marinade: In a medium bowl, combine the cubed sirloin steak, 1 tablespoon of olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper. Toss until the beef is well coated. Let it marinate while you prepare the vegetables.

      Season the Vegetables: In a large bowl, add the baby potatoes, carrots, bell peppers, and red onion. Drizzle with the remaining 2 tablespoons of olive oil and season with salt and pepper. Toss the vegetables until they are well coated.

        Arrange on the Sheet Pan: Spread the seasoned vegetables in an even layer on one side of the prepared sheet pan. Then, add the marinated beef to the other side of the pan, ensuring that the beef and vegetables are not overcrowded.

          Roast in the Oven: Place the sheet pan in the oven and roast for about 25-30 minutes, stirring halfway through, until the beef is cooked to your desired doneness (medium-rare takes about 20-25 minutes) and the vegetables are tender and lightly caramelized.

            Finish and Serve: Once cooked, remove the pan from the oven and let it rest for 5 minutes. Garnish with fresh parsley if desired. Serve directly from the pan or plated with a side salad.
