1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper (red or yellow), sliced

1 cup snap peas, trimmed

1 medium carrot, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium preferred)

2 tablespoons oyster sauce

2 tablespoons sesame oil

1 tablespoon vegetable oil (for stir-frying)

1 teaspoon cornstarch

1/2 teaspoon black pepper

1 tablespoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Cooked jasmine or brown rice, for serving

Marinate the Beef: In a medium bowl, combine the sliced beef, soy sauce, oyster sauce, cornstarch, and black pepper. Mix well and set aside for at least 15 minutes to marinate.

    Prep the Stir-Fry: While the beef is marinating, prepare the vegetables. Wash and chop the broccoli, bell pepper, snap peas, and carrot. Set aside.

      Heat the Pan: In a large wok or skillet, heat the vegetable oil over medium-high heat until hot. You want the oil shimmering but not smoking.

        Cook the Beef: Add the marinated beef in a single layer to the hot pan. Let it sear for about 3-4 minutes without stirring to develop a nice crust. Then, stir-fry for an additional 2 minutes until the beef is browned and cooked through. Remove the beef from the pan and set aside.
