2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1/2 cup unsalted butter, cold and cubed

1 cup sharp cheddar cheese, grated

1/4 cup fresh chives, finely chopped

3/4 cup milk (plus an extra tablespoon for brushing)

1 large egg

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Whisk to combine thoroughly.

      Cut in Butter: Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Cheese and Chives: Gently fold in the grated sharp cheddar cheese and chopped chives until evenly distributed.

          Combine Wet Ingredients: In a separate bowl, whisk together the milk and the egg until well combined.

            Form the Dough: Pour the wet ingredients into the dry mixture, stirring gently with a spatula until the dough just comes together. Be careful not to overwork it; a few lumps are okay!

              Shape the Dough: Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 1 inch thick, then cut out rounds using a 2-inch biscuit cutter or the rim of a glass.

                Brush with Milk: Place the scones on the prepared baking sheet, and brush the tops with the extra tablespoon of milk to help them brown.
