Ingredients
  

  • 10.0 cups cubed day-old bread
  • 1.0 cup pecans, coarsely chopped
  • 1.0 medium onion, finely chopped
  • 2.0 stalks celery, finely chopped
  • 4.0 cloves garlic, minced
  • 0.5 cup unsalted butter
  • 1.0 cup low-sodium vegetable broth
  • 2.0 tablespoons fresh sage, chopped
  • 1.0 tablespoon fresh thyme, chopped
  • 1.0 tablespoon fresh rosemary, chopped
  • 1.0 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup dried cranberries
  • 2.0 large eggs, beaten

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Spread the chopped pecans on a baking sheet and toast them in the preheated oven for about 5-7 minutes until they are fragrant and lightly browned. Remove and set aside.
  • In a large skillet over medium heat, melt the butter. Add the chopped onion and celery, sautéing until they are soft and translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • In the skillet, add the chopped sage, thyme, rosemary, salt, and black pepper. Stir to combine and allow the flavors to meld for about a minute.
  • In a large mixing bowl, combine the cubed bread, toasted pecans, and sautéed vegetable mixture. If using, add the dried cranberries for a hint of sweetness.
  • Pour the vegetable broth over the mixture, ensuring that the bread is evenly moistened. If using, add the beaten eggs for additional binding. Gently stir to combine. You want the mixture to be moist but not soggy; add more broth if necessary.
  • Grease a 9x13 inch baking dish with butter or cooking spray. Transfer the stuffing mixture into the dish, pressing it down gently.
  • Cover the dish with foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy.
  • Let the stuffing cool for about 10 minutes before serving.
