12 oz (340g) penne pasta

1 lb (450g) Italian sausage, casings removed (mild or spicy, your choice)

1 medium onion, diced

4 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes, undrained

3 cups chicken or vegetable broth

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional for extra heat)

Salt and pepper to taste

1 cup grated Parmesan cheese

Fresh basil leaves for garnish

Olive oil for cooking

Cook the Pasta: In a large skillet or sauté pan, bring the chicken or vegetable broth to a boil. Add the penne pasta and cook according to package directions until al dente. Drain the pasta and set aside, reserving about ½ cup of the broth.

    Sauté the Sausage: In the same skillet, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it up into crumbles with a wooden spoon, about 5-7 minutes.

      Add Vegetables: Once the sausage is browned, add the diced onion, red bell pepper, and minced garlic. Sauté until the vegetables are softened, about 3-4 minutes.

        Combine Ingredients: Stir in the diced tomatoes with their juices, heavy cream, oregano, basil, and red pepper flakes (if using). Bring the mixture to a gentle simmer.

          Incorporate Pasta: Add the reserved pasta and the remaining broth to the skillet. Toss everything together until the pasta is well-coated in the sauce. Allow it all to simmer together for about 2-3 minutes to absorb the flavors.
