2 cups cooked jasmine rice (preferably chilled)

1 pound medium shrimp, peeled and deveined

2 tablespoons vegetable oil

2 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, bell peppers)

3 green onions, chopped

2 large eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prep the Shrimp: Season the shrimp with salt and a pinch of pepper. Set aside.

    Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the minced garlic and sauté until fragrant (about 30 seconds).

      Cook the Shrimp: Add the seasoned shrimp to the pan and cook for 2-3 minutes per side until they're pink and opaque. Remove the shrimp from the skillet and set aside.

        Scramble the Eggs: In the same skillet, add a little more oil if needed and pour in the beaten eggs. Stir gently with a spatula until fully cooked, then transfer to a plate.

          Stir-Fry the Veggies: Add the mixed vegetables to the skillet and stir-fry for about 2-3 minutes until tender. Add the chopped green onions and toss for another minute.

            Combine Ingredients: Stir in the chilled rice, breaking up any clumps. Add the cooked shrimp and scrambled eggs back to the pan. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Mix everything together, ensuring the rice and ingredients are well coated with sauce.

              Final Seasoning: Taste and adjust seasoning, adding salt and pepper as desired. Continue to stir-fry for another 2-3 minutes until everything is heated through.

                Garnish & Serve: Remove from heat. Garnish with fresh cilantro or parsley if desired. Serve hot and enjoy your quick & zesty shrimp fried rice!
