2 tablespoons olive oil

1 large onion, sliced

2 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Prep the Sausage: Start by removing the sausage from its casings. You can squeeze the sausage out of the casings into bite-sized pieces for easier cooking.

    Heat the Oil: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the sausage pieces and cook until browned and cooked through, about 5-7 minutes. Stir occasionally to evenly brown the sausage.

      Add Aromatics: Once the sausage is cooked, add the sliced onion and garlic to the skillet. Sauté for about 2-3 minutes until the onion becomes translucent and the garlic is fragrant.

        Incorporate Peppers: Add the sliced bell peppers to the skillet. Sprinkle in the dried oregano and smoked paprika. Stir everything together, seasoning with salt and pepper to taste. Cook for another 5-7 minutes, or until the peppers are tender but still slightly crisp.

          Final Touches: Taste and adjust seasoning if needed. If desired, sprinkle chopped parsley over the top for a fresh finish.
