Savory Spinach and Cheese Stuffed Shells

For the Stuffed Shells:

20 jumbo pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup fresh spinach, finely chopped

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

For the Marinara Sauce:

2 cups marinara sauce (store-bought or homemade)

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional)

1 teaspoon dried basil

1 teaspoon dried oregano

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large mixing bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, chopped spinach, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Make the Sauce: In a saucepan over medium heat, warm the olive oil. Add the marinara sauce, red pepper flakes (if using), dried basil, and dried oregano. Stir and simmer for 5-10 minutes until warmed through.

          Stuff the Shells: Take each cooled pasta shell and fill it generously with the spinach and cheese mixture. Place each stuffed shell seam-side up in a baking dish.

            Add Sauce: Pour the marinara sauce over the stuffed shells, ensuring they are well-coated. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired, and serve hot.
