Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup cold unsalted butter, cubed

1/2 cup shredded sharp cheddar cheese

1/2 cup sun-dried tomatoes, packed in oil, drained and chopped

1/4 cup fresh basil leaves, chopped

3/4 cup buttermilk

1 egg, beaten (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until evenly combined.

Cut in Butter: Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingertips, blend the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese and Herbs: Stir in the shredded cheddar cheese, chopped sun-dried tomatoes, and fresh basil using a spatula.

Mix Wet Ingredients: Make a well in the center of the dry mixture and pour in the buttermilk. Gently mix with a fork until just combined; avoid overworking the dough.

Shape the Dough: Transfer the dough onto a lightly floured surface. Gently knead it a few times until it comes together. Pat the dough into a 1-inch thick circle.

Cut Scones: Using a knife or a dough cutter, cut the circle into 8 wedges (like a pizza). Carefully transfer the wedges onto the prepared baking sheet, leaving some space between them.

Egg Wash: Brush the tops of the scones with the beaten egg to give them a beautiful golden color when baked.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the scones are golden brown and cooked through.

Cool and Serve: Once baked, remove from the oven and let cool on a wire rack for a few minutes. Serve warm with butter or on their own for a delicious snack or breakfast delight!
