Savory Turkey and Quinoa Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

1 cup cooked quinoa

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or Monterey Jack)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

      Cook the Turkey: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

        Add Turkey: Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

          Combine Ingredients: Once the turkey is browned, stir in the diced tomatoes, black beans, corn, cooked quinoa, chili powder, cumin, smoked paprika, salt, and pepper. Mix well and let it heat through for about 2-3 minutes.

            Stuff the Peppers: Carefully spoon the turkey and quinoa mixture into the hollowed-out bell peppers, packing it tightly. Place any leftover filling around the peppers in the baking dish.

              Add Cheese: Sprinkle shredded cheese on top of each stuffed pepper.

                Bake: Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
