4 large russet potatoes, thinly sliced

2 cups heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup grated Gruyère cheese

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme leaves

Salt, to taste

Black pepper, to taste

2 tablespoons unsalted butter

1 cup chopped yellow onion

1/4 teaspoon cayenne pepper (optional)

Fresh chives, for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with a little butter.

    Sauté Aromatics: In a medium skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onions and sauté until they are translucent and slightly caramelized, about 5-7 minutes. Add in the minced garlic and cook for an additional 1-2 minutes until fragrant. Remove from heat.

      Make the Cream Mixture: In a large bowl, whisk together the heavy cream, whole milk, rosemary, thyme, cayenne pepper (if using), salt, and black pepper to taste.

        Layer the Potatoes: Start by placing a layer of sliced potatoes at the bottom of the greased baking dish. Spread a portion of the sautéed onion and garlic mixture over the potatoes. Sprinkle a layer of cheddar and Gruyère cheeses on top. Repeat the layers (potatoes, onion/garlic, cheeses) until all ingredients are used, finishing with a layer of cheese on top.

          Pour the Cream Mixture: Carefully pour the cream mixture evenly over the layered potatoes and cheese, ensuring all layers are well coated.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 30-40 minutes or until the potatoes are tender and the top is golden brown and bubbly.
