Ingredients

4 medium zucchinis (spiralized into noodles)

1 lb large shrimp (peeled and deveined)

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons unsalted butter

3 cloves garlic (minced)

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Red pepper flakes (optional, for heat)

Instructions

Prepare the Zucchini Noodles: Start by spiralizing the zucchinis to create zoodles (zucchini noodles). If you don’t have a spiralizer, you can use a julienne peeler. After spiralizing, place the zoodles in a colander, sprinkle lightly with salt, and let them sit for about 10 minutes to allow excess moisture to drain.

Cook the Shrimp: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Add the shrimp to the skillet and season with Italian seasoning, salt, and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Make the Alfredo Sauce: In the same skillet, pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and the remaining tablespoon of butter. Keep stirring until the cheese has melted and the sauce is smooth. If the sauce is too thick, you can add a splash of pasta water or more cream to reach your desired consistency.

Combine Everything: Add the shrimp back to the skillet with the Alfredo sauce, mixing them in gently. Carefully fold in the zucchini noodles, ensuring they are well coated with the Alfredo sauce. Cook for an additional 2-3 minutes, just until the zoodles are heated through, but still have a slight crunch.

Serve: Transfer the Shrimp Alfredo Zucchini Noodles to bowls or plates. Garnish with chopped parsley and sprinkle with red pepper flakes for added heat if desired. Serve warm and enjoy your creamy, delicious meal!
