1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced (about 2 tablespoons)

2 tablespoons olive oil

1 teaspoon honey

1 teaspoon garlic powder

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional for heat)

Mixed greens, for serving

Instructions
 

Cook the Shrimp: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the shrimp. Season with garlic powder, salt, pepper, and red pepper flakes if using. Cook for about 3-4 minutes, or until the shrimp turns pink and opaque, stirring occasionally. Remove from heat and let cool slightly.

    Prepare the Dressing: In a small bowl, whisk together the lime juice, remaining tablespoon of olive oil, honey, and a pinch of salt and pepper. Set aside.

      Mix the Salad: In a large mixing bowl, combine the diced avocados, cherry tomatoes, red onion, and cilantro. Gently toss to combine the ingredients without mashing the avocados.

        Combine: Once the shrimp has cooled, add it to the avocado mixture. Drizzle the dressing over the salad and toss gently until all ingredients are coated.
