1 lb medium-sized shrimp, peeled and deveined

2 cups long-grain white rice

4 cups chicken stock

1 medium onion, finely chopped

1 green bell pepper, diced

2 celery stalks, diced

3 cloves garlic, minced

1 cup cooked and crumbled spicy sausage (such as andouille)

1 Tbsp Cajun seasoning (adjust to taste)

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional, for heat)

4 green onions, sliced (for garnish)

2 Tbsp vegetable oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Rice: Rinse the long-grain rice under cold water until the water runs clear. Set aside.

    Sauté the Vegetables: In a large, heavy-bottomed skillet or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion, diced green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

      Add the Garlic and Sausage: Stir in the minced garlic and the crumbled sausage. Cook for another 3-4 minutes until the sausage is slightly browned and fragrant.

        Season the Mixture: Sprinkle the Cajun seasoning, smoked paprika, cayenne pepper, and a pinch of salt and pepper over the vegetable mixture. Mix well to coat the vegetables and sausage with spices.

          Toast the Rice: Add the rinsed rice to the skillet and stir to combine. Toast the rice for about 2 minutes, allowing it to absorb the flavors.

            Add the Chicken Stock: Pour in the chicken stock, bring to a boil, then reduce the heat to low. Cover the pot tightly with a lid, allowing the rice to simmer for about 15 minutes, until the liquid is absorbed and the rice is tender.
