1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon honey

1 cup fresh pineapple, diced

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 head of butter or romaine lettuce, leaves separated

1/2 red bell pepper, thinly sliced

1/2 cucumber, julienned

Fresh cilantro and mint leaves, for garnish

Sliced avocado (optional)

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp, olive oil, minced garlic, ginger, soy sauce, lime juice, and honey. Allow the shrimp to marinate for at least 20 minutes.

    Prepare the Pineapple Glaze: In a small saucepan over medium heat, cook the diced pineapple until softened (about 5 minutes). Add the cornstarch slurry to the pan and stir until the mixture thickens. Remove from heat and set aside.

      Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp to the pan in a single layer. Cook for about 2-3 minutes per side until they are pink and opaque. Remove from heat.

        Assemble the Lettuce Wraps: To assemble, take a lettuce leaf and fill it with a few shrimp, slices of red bell pepper, and cucumber. Drizzle a generous amount of the pineapple glaze over the top.
