Ingredients

12 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/2 cup unsalted butter (1 stick)

1/4 cup extra virgin olive oil

1/2 tsp red pepper flakes (adjust to taste)

1/2 cup dry white wine (or chicken broth)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, add linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Prepare the Shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add garlic and sauté for about 1 minute until fragrant.

Sauté the Shrimp: Add shrimp to the skillet, sprinkle with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes until they turn pink and opaque, stirring occasionally. Remove shrimp using a slotted spoon and set aside.

Make the Sauce: In the same skillet, add the white wine (or chicken broth) and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly. Add the remaining butter, olive oil, lemon juice, and lemon zest. Stir until the butter has melted and the sauce is well combined.

Combine Ingredients: Return the shrimp to the pan and toss to coat in the sauce. Gradually add the cooked linguine to the skillet, tossing gently to combine everything. If the mixture seems dry, add reserved pasta water a little at a time until you reach the desired creaminess.

Garnish and Serve: Stir in chopped parsley, and adjust seasoning with more salt, pepper, and red pepper flakes if needed. Serve hot, garnished with grated Parmesan cheese and a wedge of lemon on the side.
