2 cups heavy cream

1 cup whole milk

3/4 cup honey (preferably lavender-infused honey)

1 tablespoon dried culinary lavender buds

5 large egg yolks

1 teaspoon vanilla extract

Pinch of salt

Instructions
 

Infuse the Milk: In a medium saucepan, combine the heavy cream, whole milk, lavender buds, and salt. Heat over medium heat until steaming but not boiling. Remove from heat and let it steep for 15-20 minutes to allow the lavender to infuse its flavor.

    Prepare the Egg Mixture: While the milk is infusing, in a separate bowl, whisk together the egg yolks and honey until well combined and slightly pale in color.

      Combine & Temper: Slowly strain the infused milk mixture through a fine-mesh sieve into a bowl to remove the lavender buds. (This can also be done directly into the saucepan.) Gradually pour the warm milk mixture into the egg-yolk mixture while whisking continuously to temper the yolks and prevent curdling.

        Cook the Custard: Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 8-10 minutes). Do not let it boil.

          Chill the Base: Remove from heat and stir in the vanilla extract. Pour the custard into a clean bowl, cover with plastic wrap (pressing the wrap directly onto the surface to prevent a skin from forming), and chill in the refrigerator for at least 4 hours or overnight for best results.

            Churn the Ice Cream: Once the custard is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

              Freeze: Transfer the ice cream to an airtight container and freeze for at least 4 hours until firm.

                Serve: Scoop the silky lavender honey ice cream into bowls or cones, and drizzle with additional lavender honey if desired. Enjoy the delightful floral notes!
