Slow Cooker Beef Stroganoff

2 pounds beef chuck, cut into 1-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (white or cremini)

2 cups beef broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

1 cup sour cream

4 tablespoons all-purpose flour (optional, for thickening)

12 ounces egg noodles

Fresh parsley, chopped (for garnish)

Prepare the Beef: In a bowl, season the beef cubes generously with salt and pepper. Optional: Sear the beef in a skillet over medium-high heat until browned on all sides for extra flavor (this step can be skipped if using a slow cooker).

    Combine Ingredients: In the slow cooker, place the beef, chopped onions, minced garlic, sliced mushrooms, beef broth, Worcestershire sauce, Dijon mustard, thyme, paprika, and an additional pinch of salt and pepper. Stir gently to combine.

      Cook on Low: Cover and cook on low heat for 6-8 hours, or until the beef is tender and easy to shred with a fork.

        Thicken Sauce (Optional): If you prefer a thicker sauce, stir the all-purpose flour with a few tablespoons of the slow-cooked liquid in a small bowl until smooth. Return this mixture to the slow cooker in the last 30 minutes of cooking and stir until well combined.

          Prepare Noodles: About 15 minutes before serving, bring a pot of salted water to a boil. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

            Finish the Stroganoff: Once the beef is tender, stir in the sour cream until well combined. Taste and adjust seasoning if necessary.

              Serve: Serve the beef stroganoff over the cooked egg noodles and garnish with fresh chopped parsley.
