2 lbs beef stew meat, cut into 1-inch cubes

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup sour cream

4 oz cream cheese, softened

2 tablespoons fresh parsley, chopped (for garnish)

8 oz egg noodles (for serving)

Instructions
 

Prepare the Beef: In a large mixing bowl, season the beef stew meat with salt and pepper.

    Sauté Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Sauté onions and garlic for about 3-4 minutes, or until onions are translucent. Add mushrooms and cook for an additional 5 minutes until tender.

      Combine Ingredients in the Slow Cooker: Transfer the sautéed mixture to your slow cooker. Add the seasoned beef, beef broth, Worcestershire sauce, Dijon mustard, thyme, and paprika. Stir well to combine all ingredients.

        Slow Cook: Cover and cook on low for 7-8 hours or high for 3-4 hours, until the beef is tender.

          Make it Creamy: About 30 minutes before serving, add the softened cream cheese and sour cream to the slow cooker. Stir until the mixture is creamy and well combined.

            Cook the Noodles: Prepare the egg noodles according to package instructions in a separate pot. Drain and set aside.
