1 lb ground beef (or turkey for a leaner option)

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (28 oz) diced tomatoes (with juices)

1 cup fig jam (store-bought or homemade)

1 cup beef or vegetable broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for spice)

Salt and pepper, to taste

1 bell pepper, diced (red, yellow, or green)

1 tablespoon olive oil

Fresh cilantro or parsley, for garnish

Sour cream or Greek yogurt, for serving (optional)

Shredded cheese, for serving (optional)

Instructions
 

Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent, about 3-4 minutes.

    Brown the Meat: Add the ground beef (or turkey) to the skillet. Cook until browned, breaking it apart with a spatula, about 5-6 minutes. Drain excess fat if necessary.

      Combine Ingredients: In the slow cooker, add the browned meat along with the sautéed onions and garlic. Stir in the black beans, kidney beans, diced tomatoes, fig jam, beef or vegetable broth, diced bell pepper, chili powder, cumin, smoked paprika, cayenne pepper (if using), and salt and pepper to taste.
