Slow Cooker Summer Chili

1 pound ground turkey or lean beef

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 zucchini, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (28 oz) diced tomatoes, with juice

2 tablespoons chili powder

1 tablespoon cumin

1 tablespoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 jalapeño, minced (optional, for heat)

1 tablespoon olive oil

Fresh cilantro, for garnish

Avocado slices, for serving

Lime wedges, for serving

Instructions
 

Sauté the Base: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent (about 3-4 minutes). Add the ground turkey or beef, cooking until browned. Drain excess fat if necessary.

    Combine Ingredients: In your slow cooker, combine the sautéed meat mixture, diced red and yellow bell peppers, zucchini, black beans, kidney beans, corn, and diced tomatoes.

      Season the Chili: Sprinkle in the chili powder, cumin, smoked paprika, salt, black pepper, and minced jalapeño (if using). Stir everything together until well combined.
