Smoked Salmon and Dill Pasta

8 oz (225g) fettuccine or linguine pasta

4 oz (115g) smoked salmon, sliced into thin strips

1 cup (240ml) heavy cream

1/2 cup (120ml) white wine (such as Sauvignon Blanc)

2 tablespoons olive oil

3 cloves garlic, minced

1 small shallot, finely chopped

1 tablespoon fresh dill, chopped (plus extra for garnish)

1 tablespoon lemon juice

1 teaspoon lemon zest

Salt and black pepper, to taste

1/2 cup (50g) grated Parmesan cheese

Optional: capers, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot. Sauté for 2-3 minutes until the shallots become translucent and fragrant.
