2 medium sweet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 carrots, diced

2 cans (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes (with juices)

1 can (15 oz) tomato sauce

2-3 chipotle peppers in adobo sauce, chopped (adjust to taste)

1 tsp smoked paprika

1 tsp ground cumin

1 tsp oregano

½ tsp cayenne pepper (optional)

4 cups vegetable broth

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, for garnish

Avocado slices, for garnish

Lime wedges, for serving

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until translucent and fragrant.

    Add the Aromatics: Stir in the diced carrots, red and green bell peppers, and sweet potatoes. Cook for another 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

      Incorporate the Spices: Add the smoked paprika, cumin, oregano, cayenne pepper (if using), salt, and pepper. Stir well to coat the vegetables in the spices.

        Add Tomatoes and Beans: Pour in the diced tomatoes, tomato sauce, black beans, and chopped chipotle peppers. Stir to combine all the ingredients.

          Simmer the Chili: Add the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the sweet potatoes are tender and the chili is thickened.

            Taste and Adjust: After simmering, taste the chili and adjust the seasoning if necessary. Add more chipotle or cayenne for extra heat if desired.
