1 pound Brussels sprouts, trimmed and halved

6 slices of thick-cut bacon, chopped

1/4 cup pure maple syrup

2 tablespoons apple cider vinegar

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon freshly ground black pepper

Salt to taste

2 tablespoons olive oil

1/4 cup chopped pecans (optional)

Fresh parsley, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts and olive oil. Toss until they are well-coated.

      Cook the Bacon: In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and place on a paper towel-lined plate, leaving the bacon grease in the skillet.

        Season the Brussels: Using the skillet with bacon drippings, add the Brussels sprouts. Sauté for about 5 minutes, stirring occasionally, until they are slightly golden.

          Add Flavor: In a small bowl, mix the maple syrup, apple cider vinegar, smoked paprika, garlic powder, and black pepper. Pour this mixture over the Brussels sprouts and stir to coat evenly.

            Bake: Transfer the Brussels sprouts to a baking sheet. Sprinkle the reserved bacon on top and spread pecans evenly over the sprouts if using. Bake in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and caramelized, stirring halfway through for even cooking.
