1 lb Brussels sprouts, trimmed and halved

6 strips of thick-cut bacon, chopped

1/4 cup pure maple syrup

1 tablespoon smoked paprika

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 cup balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Bacon: In a large skillet over medium heat, cook the chopped bacon until it's crispy. Once done, use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the bacon fat in the skillet.

      Sauté Brussels Sprouts: In the skillet with the bacon fat, add the halved Brussels sprouts. Sauté them for about 5-7 minutes until they start to brown.

        Season the Sprouts: Sprinkle smoked paprika, garlic powder, black pepper, and salt over the Brussels sprouts. Drizzle with olive oil and toss until evenly coated.

          Combine Bacon and Maple Syrup: In a small bowl, mix the crispy bacon with maple syrup. Pour this mixture over the Brussels sprouts, tossing to combine.

            Roast the Mixture: Transfer the Brussels sprouts and bacon mixture to a baking sheet lined with parchment paper. Spread them out evenly and roast in the preheated oven for about 20-25 minutes, or until the Brussels sprouts are tender and caramelized.

              Add Balsamic Vinegar: In the last 5 minutes of roasting, drizzle the balsamic vinegar over the Brussels sprouts and toss them to coat again.
