1 medium head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon ground cumin

Salt and pepper to taste

4 large whole wheat or gluten-free wraps

1 cup leafy greens (spinach, arugula, or mixed greens)

½ cup cherry tomatoes, halved

½ avocado, sliced

¼ cup red onion, thinly sliced

½ cup ranch dressing (homemade or store-bought)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper until they are well coated.

      Roast the Cauliflower: Spread the seasoned cauliflower onto a baking sheet in a single layer. Roast for about 25-30 minutes, or until golden brown and tender, flipping halfway through for even cooking.

        Prepare the Wraps: While the cauliflower is roasting, lay the whole wheat or gluten-free wraps on a clean surface.

          Assemble the Wraps: Once the cauliflower is ready, remove it from the oven and let it cool slightly.

            - On each wrap, layer on a handful of leafy greens.

              - Add a scoop of roasted cauliflower, a handful of cherry tomatoes, avocado slices, and red onion.

                - Drizzle ranch dressing over the top.

                  Wrap it Up: Fold in the sides of the wrap, then roll it tightly from the bottom to the top. Secure with a toothpick if necessary.

                    Serve: Garnish with fresh cilantro or parsley, if desired, and serve immediately. You can also cut the wraps in half for easier handling.
