2 lbs Yukon Gold potatoes, peeled and cubed

1/2 cup sour cream (full-fat for creaminess)

1/4 cup whole milk (or more if needed)

4 tbsp unsalted butter

1/4 cup fresh chives, finely chopped

Salt and pepper, to taste

Optional: a pinch of garlic powder or roasted garlic for extra flavor

Instructions
 

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the cubed Yukon Gold potatoes and cook for about 15-20 minutes, or until tender when pierced with a fork.

    Drain and Steam Dry: Once the potatoes are tender, drain them in a colander. Allow them to sit for a minute or two to let the steam escape, which helps achieve a fluffy texture.

      Mash the Potatoes: Return the drained potatoes to the pot. Using a potato masher or ricer, mash the potatoes until smooth but still slightly chunky for texture.

        Add the Creaminess: Add the butter, sour cream, and whole milk to the mashed potatoes. Mix until you achieve your desired consistency. If the mixture seems too thick, add more milk gradually.

          Season & Stir In Chives: Stir in the finely chopped chives, and season with salt and pepper to taste. For an extra kick, you can also add a pinch of garlic powder or some roasted garlic.
