1 medium head of green cabbage (about 2-3 lbs), chopped

1 lb smoked sausage (kielbasa or andouille), sliced into half-moons

4 slices of thick-cut bacon, chopped

1 medium onion, diced

3 cloves of garlic, minced

1 cup chicken broth (or vegetable broth)

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

2 tablespoons olive oil

2 tablespoons apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large skillet or a Dutch oven, heat the olive oil over medium heat. Add the chopped bacon and cook until it’s crispy, about 5-6 minutes. Use a slotted spoon to remove the bacon, leaving the rendered fat in the skillet. Set the bacon aside on a paper towel-lined plate.

    Sauté the Sausage: In the same skillet with the remaining bacon fat, add the sliced sausage. Sauté for about 4-5 minutes until browned and crispy around the edges. Remove the sausage from the skillet and set aside with the bacon.

      Cook the Onions and Garlic: Add the diced onion to the skillet and cook until translucent, about 3-4 minutes. Then, stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add the Cabbage: Slowly add the chopped cabbage to the skillet, stirring well to mix with the onions and garlic. Cook for about 5 minutes, until the cabbage starts to wilt.

          Season and Simmer: Pour in the chicken broth, then add the smoked paprika, red pepper flakes, salt, and pepper. Stir everything together, then cover and let the cabbage simmer on low heat for about 15 minutes. This will help the cabbage soften and absorb all the flavors.

            Finish the Dish: Once the cabbage has softened, return the cooked sausage and bacon to the skillet. Drizzle with apple cider vinegar and stir well to combine. Cook for an additional 5 minutes, allowing the ingredients to heat through and meld together.

              Serve: Remove the skillet from heat. Taste and adjust seasoning if necessary. Serve warm, garnished with fresh parsley for a beautiful finish. This dish pairs perfectly with cornbread or over rice.
