2 cups cooked chicken, shredded or diced (grilled, rotisserie, or poached)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen, thawed)

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 avocado, diced

1 small red onion, finely chopped

1 cup romaine lettuce, chopped

1/4 cup fresh cilantro, chopped

1/2 cup shredded cheddar cheese

1/4 cup olive oil

2 tablespoons lime juice

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

1/4 teaspoon cayenne pepper (optional for extra heat)

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, salt, pepper, and cayenne pepper (if using). Set aside.

    Combine the Salad Ingredients: In a large mixing bowl, add the cooked chicken, black beans, corn, cherry tomatoes, red bell pepper, avocado, red onion, and chopped cilantro. Gently toss until well combined.
