Ingredients
  

1 head romaine lettuce, chopped

1 cup baby spinach, roughly torn

1 cup cherry tomatoes, halved

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 avocado, diced

½ red onion, thinly sliced

½ cup shredded cheddar cheese

½ cup cilantro leaves, chopped

1 jalapeño, sliced (optional for extra heat)

Juice of 2 limes

¼ cup olive oil

1 teaspoon cumin

Salt and pepper to taste

Tortilla strips for garnish

Instructions
 

Prepare the Greens: In a large mixing bowl, combine the chopped romaine lettuce and torn baby spinach. Toss gently to mix them well.

    Add the Veggies: To the greens, add the halved cherry tomatoes, rinsed black beans, corn, diced avocado, sliced red onion, and chopped cilantro. If you’re using jalapeño for additional heat, toss that in as well.

      Make the Dressing: In a separate bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until the dressing is well combined and emulsified.

        Dress the Salad: Pour the dressing over the salad mixture and gently toss until all the ingredients are evenly coated with the dressing. Adjust seasoning with additional salt and pepper if necessary.

          Add Cheese: Sprinkle the shredded cheddar cheese over the top of the salad.
