12 oz spaghetti

2 cups fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (toasted)

3 cloves garlic, peeled

1/2 cup extra virgin olive oil

Juice of 1 lemon

Salt and freshly ground black pepper, to taste

Cherry tomatoes, halved (for garnish)

Extra Parmesan cheese, for serving

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

    Prepare the Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, grated Parmesan cheese, and garlic cloves. Pulse until the ingredients are coarsely chopped.

      Blend the Pesto: With the food processor running, slowly drizzle in the extra virgin olive oil until the mixture is well combined and smooth. You might need to stop and scrape down the sides of the bowl occasionally. Add lemon juice, salt, and pepper; blend until well mixed.

        Combine Spaghetti and Pesto: In a large mixing bowl, toss the cooked spaghetti with the basil pesto. If the pasta seems too dry, add reserved pasta water a little at a time until you reach your desired consistency.
