1 cup buttermilk

½ cup vegetable oil

1 teaspoon vanilla extract

2 cups peeled, cored, and diced apples (preferably Granny Smith)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Combine Wet Ingredients: In another bowl, beat the egg. Then stir in the buttermilk, vegetable oil, and vanilla extract until fully combined.
